Oh Em Geeeeeee! I have been on a diet for about 6 weeks now. I really, really like sweets, so it has been so hard not to eat anything decadent. Whenever I crave something sweet or even decadent, I bake it and make Matt and the kids eat it! I did however try a few bites of these beauties and like I said “oh Em geeeeee”! If you are a fan of red velvet and don’t feel like baking a whole cake, just make these goodies and your craving for red velvet will indeed be satisfied!!
- 6 cups of rice krispies
- 1 bag of marshmallows
- 2 tablespoons of butter
- 1 cup of red velvet cake mix
- A generous cup of white chocolate chips
- Cream cheese frosting
Heat marshmallows and butter in a big non stick pan over medium or low heat. While the marshmallows and butter get to know each other, mix the red velvet cake mix and the krispies in a bowl to coat them good.
After the marshmallows are melted remove from heat. Add the krispies and cake mix mixture to the marshmallows. Stir really good and make sure all cake mix is distributed. After that’s mixed, add in the white chocolate chips and stir. Immediately put in a sprayed non stick pan ( I used a cupcake pan to make balls). I had a lot left and I didn’t have another cupcake pan prepared. I used a silicone loaf pan.
After the treats are cool, heat up the cream cheese frosting in 10 second intervals until the consistency is good enough to drizzle. I spooned the frosting into a ziploc bag and cut a corner to make the drizzling easier. After the frosting is cool, put the treats out to display or in our case to be devoured! Such a cute Valentine’s Day treat too! Enjoy!!
